Nacho Night


Nachos! Only thing non paleo here is Blue corn non gmo organic tortilla chips, it's still ok to enjoy healthier versions of the things you love in the paleo lifestyle once and awhile :)



Paleo Lunch 1-21-12

 Bok Choy Stir Fry

Bok Choy
Portobello Mushrooms
Carrot slivers (use a vegetable peeler to make thin carrot slivers)
Garlic 2 Cloves
Ham, Nitrate free as much as you want to add
Coco Aminos Non-soy sauce

Cook ham in skillet, throw in all veggies and pressed garlic stir fry until crisp and tender, season with Coco aminos non-soy sauce, serve.





 














Dad's Homemade Almond Joy

Almonds
Organic Dark Chocolate squares
Coconut Chunks

Mix and enjoy for a special treat

Paleo Breakfast 1-21-2012


This morning we had

Confetti Eggs

8 eggs

1/2 Lb nitrate free sausage

Desired amount of onions and bell peppers

Scramble eggs, in a separate skillet cook sausage, when sausage is done combine with eggs, saute onions and peppers in sausage skillet with sausage bits remaining, combine with egg and sausage mixture. Serve with fruit of choice. Easy peasy :)

This Week's Junk at School

I would like to introduce a weekly project to this blog. I want to track the junk that is given to my children at school every week. Just a list that tells the things that I am aware of that they are given to eat at school each week as extra "treats", the occasional school lunch menu breakdown (my kids take their lunch). Feel free to add your own list in the comments section below.

This Weeks Junk

1.) Peanut butter cake
2.) Chocolate Donuts
3.) Capri Sun
4.) Sweet Tarts
5.) Store Bought Cupcake
6.) Snack mix: Goldfish crackers, pretzels, gummy bears, chocolate chips

Now that's just what I can remember at this moment. We have school age children with Type 2 diabetes, fatty liver disease, and obesity.

School Lunch I'd like to Pick on Today

Tuesday January 17th
On the menu:

Grilled Chicken on a Whole Wheat Bun ( at least it was grilled!)
why do they need the bun on the chicken with all the carbohydrates that follow with these side items? -Bun at least 20 Carbs

French fries - at least 20 carbs
Fruit Freeze - at least 15 carbs
Tropical Fruit - at least 15 carbs
Rice Crispy Treat - at least 15 carbs
Assorted Milk (Includes Strawberry and Chocolate) - at least 15 carbs

Grand Total: 100 carbs (I am probably under guessing here) this is a Kindergartners lunch menu for our school.

How do I know these carb counts? My son is Type 1 diabetic (autoimmune form) He could Never eat this lunch! Why should your child?

Hello Paleo!

Well hello again. It has been awhile since I have blogged. We moved again. I have been going through a lot of personal exploration lately. I like change, it helps me grow. I am making a major change in my families life and I would like to use this blog to document what we are doing and the results we have good or bad. The change I am speaking of is switching to the Paleo/Primal lifestyle. Living in Mississippi it is like watching a salmon trying to swim upstream to eat and live this way. I am ready to challenge conventional wisdom on nutrition. I am tired of autoimmune diseases and sickness, I am ready for vitality and life. Going gluten free did major things to improve our health, time to take it a step further, time to go Paleo. I invite you to follow along or join me in this change, share your ideas, reconsider everything you think about healthy eating.
